Ingredients
- Peeled and seedless red plum- 250 gm
- Granulated Sugar- 1/2 cup sugar
- Kashmiri red chili powder-1 teaspoon
- Black Salt- 2 teaspoons
- Black Pepper- 1 teaspoon
- Roasted cumin powder-1/4 teaspoon
- Lemon juice-4-5 drops
Steps to prepare silky smooth plum chutney
Prep Your Plums
Peel and cut the plum into small pieces, and remove the seed. You can also grate it for an even smoother chutney, but dicing works perfectly for a slightly pulpy texture.
Cooking of Plums
In a small saucepan, add chopped, seedless, diced plums and sauté over a simmering gas for about one minute.
Combine & Cook
Combine the plums with the sugar. Place the pan over very low heat. Stir continuously. The sugar will start to melt, and the plum will release its juices.
Simmer & Thicken
Continue cooking on low heat, stirring frequently, for about 8-10 minutes. Add black salt & red chili powder at this stage of cooking and mix well.
Cover & Cook
The mixture will start to bubble gently, and the plum pieces will soften and break down, absorbing the melted sugar and becoming a marmalade-like consistency.
Let's spice it up more
Stir in the black pepper and roasted cumin powder. Mix everything thoroughly until the spices are well incorporated.
Touch of Lemon
Add 4-5 drops of lemon juice for a long shelf life of chutney.
