In 2020, the pandemic gave us a new perspective and habits of life. We learnt to live within the walls. Although, we did miss the daily pleasures that were jeopardized because of the pandemic. The movie theatres, shopping malls, work, school, outdoor games, fast food, and street food, the way we used to do these things normally had changed. OTT platforms and homecooked street/fast food became the new normal. 

Everyone tried to make these daily pleasures possible within the current limits. All the moms and dads tried to bring the taste of street food to the meal tables made at home. Every cuisine was tried and many were newly explored during the lockdown. 

What I was missing the most were the street momos. So, I thought- Why not bring these street momos onto our home dining table too? 

Momos are steamed fast food. Though, I feel they are pretty healthy if prepared in a hygienic atmosphere with healthy ingredients. 

Most people have the misconception that momos come from chinese cuisine, but they actually originated in Nepal, which then spread across Tibet, China, and Japan. 

Another misunderstanding is that momos and dim sums are one and the same thing, dim sum just being a fancier name. This is only partially true and Dim sums actually originated from China.

You will be surprised to know the facts that distinguish them :

  • Momos are essentially made of aata or maida while dim sums can be made of any kind of flour like rice flour, corn starch, potato starch. 
  • Dim sums are never served on streets and are mostly confined to fine-dine restaurants while momos are mostly street food.
  • Momos are usually served with red chili dips or white chutneys while dim sums are traditionally eaten as a tea-time snack. 
  • Momos are stuffed with meat, veggies, paneer, or tofu. But dim sums have numerous varieties.  Chicken buns, tarts, chicken feet, and even spring rolls can be called dim sums.
The recipe I am sharing today is Tibetan-style steamed aata (wheat) momos filled with healthy veggies. Using this recipe, you will at least get near-perfect homecooked street style momos even if you are a beginner.

Ingredients

For Dough

  • Wheat flour-1cup
  • Salt-1/2 teaspoon
  • Chilled water for a kneading-1/2 cup (or as required)
  • Oil for kneading and greasing -1/2 teaspoon

For Filling

  • Shredded cabbage-1 cup
  • Grated carrot- 1cup
  • Finely chopped onion-1
  • Finely chopped capsicum- 1
  • Green chili-1
  • Grated garlic- 2-3 flakes
  • Grated ginger- 1tablespoon
  • Salt-1/2 teaspoon
  • Sugar-1/4 teaspoon

Extra

  • Grated processed/mozzarella cheese-1/4 cup (optional)

Preparation Process

1. Dough Making

Step-1.1

Take a big bowl/ kneading plate, add flour, salt, and 1/4 teaspoon oil. Mix all the ingredients.

Knead a semi-soft dough by adding chilled water as required. Keep it aside covered with cling film wrap for 15 mins.

Once kneading done grease the dough with 1/4 teaspoon oil and knead again for a few seconds.

2. Stuffing Preparation

Add and combine all the veggies such as cabbage, carrot, onion, capsicum, ginger, garlic along with sugar and salt in a mixing bowl.

Take a clean cotton cloth and put the mixture in the cloth.

Squeeze and drain out the excess moisture and water from the veggies.

Take out the squeezed veggies. Add and combined grated cheese into it. The filling mix is ready.


3. Momos sheet rolling


Step-3.1

Portion the dough into small balls.

Roll all the prepared balls in very thin round sheets.

Roll all the sheets and keep them aside.

Tip: Keep sheets covered with a cloth on the flat tray or sheets will dry and shaping them will become difficult.


4. Easiest Shaping of Momos for beginners


Step- 4.1

Now take each sheet on a flat surface. Place one heaped tablespoon of stuffing in the center of the sheet. 


Step- 4.2

Hold one half of the sheet and flip it on another half as shown in the image. Seal the edges by pressing them.

Tip: If required you can dap little water with fingers on the edges to stick them well.

Now take the prepared momo and join both the ends of the momos by pressing as shown in the image.


Note: Momos can be made in different shapes by pleating the edges and gathering them all in the center to form Potli momos. So, feel free to try your own shape. 


5. Momos Cooking


Step-5.1

Heat water in a steamer. Place the prepared momos into the steamer.

Cover and cook for 10-15 minutes on medium heat till shiny seen appears over them. 

Note: Check on momos in between after 8 minutes.
