Quick Suji Handvo, is an innovation of the popular Gujarati snack made from Rava in a pan or oven.

With super active morning hours, it's very much regular to most of ours routine that we miss on our breakfast meal. Studies hint that 31 million U.S consumers miss their breakfast -the reason being too busy to eat or they don't feel hungry in the morning because of late-night munching. Though breakfast is a very important meal, if you still miss it because of any reason, make sure that you take an ideal brunch. An ideal brunch is the one that provides you with enough nutrients and energy for the entire day. 

Keeping the same thought in mind, I made this recipe especially for those who generally skip their morning meal because of the busy schedule/' or official workload. Also, students who study till late at night and need some energetic food in the past morning hours should grab such a nutrient-rich meal. 

Traditionally Suji/ Rava Handvo preparation includes curd but today's recipe is completely vegan and made without curd with lots of vegetables. This 30-minute Suji Handvo recipe is an ambrosial meal that can be served as breakfast, brunch, or evening snacks.

Ingredients

Major

  • Suji/semolina/rava- 2 cup (350 gm)
  • Eno Sachet/Fruit salt- 1 teaspoon
  • Water-4 cup

Veggies

  • Minced cauliflower- 1/2 cup 
  • Minced carrot- 1
  • Finely chopped onion- 1
  • Finely chopped tomato-1
  • Finely chopped capsicum-1
  • Grated ginger-1/2 tablespoon
  • Finely chopped green chili- 2

Spices and others

  • Mustard seed- 1 tablespoon (for Tadka)
  • Sesame seed- 1 tablespoon (for topping)
  • Turmeric powder/ Haldi- 1teaspoon
  • Red chili powder- 1 teaspoon
  • Salt- 1/2 tablespoon or as per taste
  • Oil- 3 tablespoons (for cooking)

Cooking Process

Step-1

Take 2 cups Rava in a big mixing bowl. Soak it in  4 cups of water for about 15 minutes. Keep it covered.

Step-2

Take a pan and heat 1 teaspoon oil. Add grated ginger, chopped chilies, and finely chopped onion. Saute until it turns golden pink.

Step-3

Add chopped tomato, capsicum, carrot, and cauliflower. Saute till veggies become a little soft.

Add all the spices to the veggies and combine well. Cook for another 2 minutes.

Take out the veggies mixture in a bowl and keep it aside to cool down. Add the cooled mixture to the soaked Rava.

Combine well and check the mixture, if it seems thick add water for a thick pouring consistency batter. You can give it rest or use it immediately.

When you're ready to make the Handvo just before that add fruit salt/ Eno with a dash of water over it and mix well generously.

In a non-stick pan, add 1 teaspoon oil on low medium heat. Add mustard and sesame seed.

Once seeds start crackling put a ladleful batter into the hot pan and spread it evenly. Drizzle some oil on the sides and top of the Handvo.

Cover and cook for about 5 minutes till the bottom layer turns beautiful golden color. The top layer of Handvo will be firm at this point in time.
